Juicy Grilled Turkey Burger

A turkey is a lean animal.  Thus, turkey is a great choice of protein to cook with when trying to lose weight. 

Juicy Grilled Turkey Burger

Use pre-ground turkey meat to save time.  Enjoy the same tasty foods and lose weight!

Equipment

  • Air fryer
  • Food processor
  • Food thermometer

Ingredients

  • 1lb Ground Turkey Meat
  • 1 tbsp unflavored gelatin
  • 3 tbsp low-sodium chicken broth
  • 6 oz white mushrooms
  • 1 tbsp soy sauce
  • 1 spray of canola oil from canola oil spray can, plus an extra spray for burgers
  • pinch of baking soda
  • kosher salt and pepper
  • large hamburger buns

Instructions

  • Sprinkle gelatin over chicken broth in a small bowl and let sit until gelatin softens about 5 minutes.  Pulse mushrooms in a food processor until coarsely chopped, about 7 pulses, stopping and redistributing mushrooms around bowl as needed to ensure even grinding.  Set mushrooms aside; do not wash food processor.
  • Empty 1/2 cup (3 oz) of ground turkey meat into a clean bowl.  Mix in softened gelatin, soy sauce, and baking soda for about 2 mins, scraping down bowl as needed.  Return mushrooms to food processor with paste and pulse to combine, 3 to 5 pulses, stopping and redistributing mixture as needed to ensure even mixing.  Transfer mushroom mixture to bowl with rest of ground turkey and use hands to evenly combine.
  • With lightly greased hands, divide the meat mixture into 6 balls.  Flatten into 3/4-in thick patties about 4 inches in diameter; press a shallow indentation into the center of each burger to ensure even cooking. (Shaped patties can be frozen for up to 1 month. Season patties with salt and pepper. Frozen patties can be cooked straight from the freezer.
  • Spray inside of air fryer with olive oil spray. Place burgers in air fryer and cook until burgers are well browned on both sides and register 160 degrees, flip burger after 3 minutes.  Cook for 3 minutes on each side. (If cooking frozen burgers: Cook burgers for longer on each side until browned.)
  • Transfer burgers to plate and let rest for 5 minutes.  Instead of toasting buns for your burger, use broad lettuce leaves as your buns.
