Fish Wrap with Coleslaw and Italian Bomba Crema

- Large nonstick skillet
Ingredients
- For cabbage slaw:
- 1/4 cup rice vinegar
- 1/4 tsp. sea salt
- 2 cups pre-shredded cabbage
- 1 medium apple (Pink Lady apples, recommended)
- 3/4 cup fresh cilantro
- For Italian Bomba crema:
- 1 cup reduced-fat goat milk yogurt
- 2 tbsp. Italian bomba hot pepper sauce (found at Trader Joe’s)
- 2 cloves garlic peeled and finely chopped
- 1/2 fresh lime, juiced
- 1/4 tsp. sea salt
- For Wraps:
- 12 oz or 3 to 4 raw, frozen halibut
- 1/4 tsp. sea salt
- 1/2 tsp. cumin
- 1/2 tsp. finely chopped garlic
- Nonstick cooking spray (found at Trader Joe’s)
- Carrot wraps (found on Amazon.com)
Instructions
- Add vinegar and salt to a large mixing bowl; whisk to combine.
- Add cabbage, apple, cilantro to the large mixing bowl with vinegar and salt; toss to combine. Set aside.
- To make Italian Bomba crema, add goat yogurt, Italian bomba hot pepper sauce, garlic, lime juice, and salt to a small mixing bowl and stir to combine. Set aside.
- Season halibut generously with cumin and garlic powder and a pinch of salt. Set aside.
- Heat a large nonstick skillet over medium-high heat; lightly coat with spray oil.
- Add halibut; cook for 3 minutes. Flip, cook for an additional 3 minutes.
- To make tacos, place 3 carrot wraps on two plates, top each wrap with a piece of fish. Top each generously with cabbage mixture; drizzle each with approximately 2 tbsp of the bomba mixture. Wrap Serve immediately.
